Countries of our region are characterized by the production of fine flavour cocoa that allows obtaining products of high value recognized worldwide. However, the generation of value-added products from cocoa in Latin America is minimal. In fact, European countries are leaders in this market. In addition, the quality of post-harvest processes is often underestimated. Hence, it affects the flavor of the final products.
The aim of this symposium is to show the global trends related to post-harvest quality of cocoa to promote the generation of value-added products. The symposium will feature world-class experts from Belgium, United States, Colombia, Trinidad, Ecuador, among others.
